THE INGREDIENTS LIST:
2 Cups.Of all-purpose flour.
1 Tsp.Of baking powder.
1/2 Tsp.Of baking soda.
1/2 Tsp.Of salt.
1 Tsp.Of ground cinnamon.
1/2 Tsp.Of ground nutmeg.
1/2 Cup.Of unsalted butter, softened.
1 Cup.Of granulated sugar.
2 large eggs.
1 Tsp.Of vanilla extract.
1 Cup.Of crushed pineapple, drained.
1/2 Cup.Of chopped walnuts or pecans (optional).
FOR THE GLAZE, YOU’LL NEED:
1 cup powdered sugar.
2 Tbsp.Of pineapple juice.
1/2 Tsp.Of vanilla extract.
PREPARATION METHOD:
1st Step 
Get your 9×5-inch loaf pan ready and your oven heated at 350F/175C. Put it down.
2nd Step 
Mix the flour, powdered sugar, soda, salt, cinnamon, and nutmeg in a medium bowl. Make room for the dry ingredients.
3rd Step 
Lighten the butter and granulated sugar by beating them together in a large mixing basin. Either an electric mixer or a wooden spoon and some elbow grease will do the trick.
4th Step 
the eggs, one at a time, beat well after each addition. Add the vanilla essence and mix well.
5th Step 
Mix until dry ingredients are barely incorporated after gradually adding to wet ones. Overmixing may make the bread heavy and thick.
6th Step 
Add the crushed pineapple and optional nuts and mix gently. The pineapple will give the bread a nice taste and help it retain moisture. Distribute the batter equally in a greased loaf pan.
7th Step 
Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted into the center comes out clean. The bread must have a deep golden color and feel solid when touched.
8th Step 
Make the glaze while the bread bakes. Powdered sugar, pineapple juice, and vanilla extract should be whisked together in a small bowl until smooth and properly blended. If the consistency is too thick or too thin, add additional powdered sugar or pineapple juice.
9th Step 
Take the bread out of the oven and let it rest for ten minutes while still in the pan. Then, place it on a cooling rack to cool to room temperature.
10th Step 
Once the pineapple bread has cooled, drizzle the glaze over the top and let it run down the edges. Cut the bread into slices and serve it plain or with butter, cream cheese, or any other spread you choose.
TIPS:
You may give the batter a more prominent taste reminiscent of the tropics by using one teaspoon of grated zest from either lemon or orange.
Before adding the crushed pineapple to the recipe, you may blitz it in a food processor or puree it in a blender to have a smoother consistency if that’s what you want.
You may make your pineapple bread more to your liking by using shredded coconut, raisins, or even a sprinkling of toasted coconut on top before baking. Feel free to experiment!
If you want the bread to last more you can store it in an airtight container at room temperature for up to three days, or by placing it in the refrigerator.
