  • 1 Tbsp neutral oil
  • 2 Tbsp unsalted butter
  • 1 small yellow onion finely diced
  • 1 chicken breast, sliced into thin strips (optional) Note 1
  • 2 garlic cloves minced
  • 28 oz tomatoes fresh or canned, diced or roughly chopped
  • 1/2 tsp dried basil (1/2 tsp dried basil ~ 5-7 leaves of fresh basil)
  • 1/2 cup heavy cream
  • 1/2 tsp kosher salt
  • 1/2 cup parmesan cheese grated
  • 1/4 tsp freshly ground black pepper
  • 1/2 tsp kosher salt, to taste

To serve:

       1/2 cup grated parmesan cheese
