Instructions:
Place chicken breasts in the slow cooker. Add onions, celery, garlic, and carrots. Season with thyme, salt, and pepper. Pour in the chicken broth.
Cook on low for 6-8 hours or high for 4-5 hours, until the chicken is tender.
Remove chicken, shred it, and return to the slow cooker. Stir in half and half and cornstarch.
Add potato gnocchi, cook for 15-30 minutes on high until gnocchi are tender.
Stir in spinach just before serving, cooking until it wilts. Adjust seasoning if needed.
Serve hot, garnished with Parmesan cheese if you like.
