1 cup butter
1/2 cup brown sugar
1 tsp vanilla extract
3 cups rolled oats
1/2 tsp cinnamon
1/4 tsp kosher salt
1 cup dark chocolate chips
3/4 cup chunky peanut butter
Instructions:
1. Line a square baking dish with parchment paper. We used the 8×8 size.
2. Mix butter, brown sugar, and vanilla extract in a saucepan over low heat until smooth. Make sure butter is melted and sugar dissolved.
3. Add oats, cinnamon, and salt. Heat for another 5 mins or so while stirring.
4. Pour half of this mixture into a lined/greased baking pan and press down.
2. In a microwave-safe bowl, combine peanut butter and chocolate chips. Heat in 30 second increments until combined and melted. You’ll want to stir this mixture after every 30 second interval.
These are eaten and I get a crumb; they never survive a minute out of the oven.
