For the Skillet:
1 tbsp olive oil
1 onion, finely chopped
2 cloves garlic, minced
1 can (14 oz) crushed tomatoes
1 tsp dried oregano
1 tsp dried basil
Salt and pepper to taste
1 cup vegan mozzarella cheese, shredded
Fresh basil for garnish
