- Prepare your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats and set aside.
- In a large mixing bowl, cream together the softened butter, creamy peanut butter, granulated sugar, and brown sugar until smooth and fluffy.
- Add the egg and vanilla extract to the creamed mixture, beating until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt until evenly combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Be careful not to overmix.
- Shape the dough into 1-inch balls and roll each ball in granulated sugar to coat evenly.
- Place the sugar-coated dough balls onto the prepared baking sheets, spacing them about 2 inches apart to allow for spreading during baking.
- Using a fork, gently flatten each dough ball in a crisscross pattern to create the classic peanut butter cookie shape.
