Directions
1. Line an 8-inch square baking pan with aluminum foil and lightly grease the foil with cooking spray or butter. This will make it easier to remove the fudge once it’s set.
2. In a medium saucepan, combine the granulated sugar and milk. Cook over medium heat, stirring constantly, until the sugar is completely dissolved.
3. Bring the mixture to a boil, and let it boil for exactly 2 minutes without stirring. This helps to achieve the right fudge consistency.
4. Remove the saucepan from heat and stir in the vanilla extract and peanut butter. Mix until everything is well combined and the mixture is smooth.
5. Pour the fudge mixture into the prepared pan, spreading it evenly.
6. Let the fudge cool at room temperature until it is completely set. You can also speed up the process by placing it in the refrigerator.
7. Once set, lift the fudge out of the pan using the foil and cut it into squares.
Variations & Tips
For a twist on the classic recipe, try adding a handful of chocolate chips or chopped nuts to the mixture just before pouring it into the pan. If you’re a fan of sea salt and sweet combinations, sprinkle a bit of flaky sea salt on top of the fudge before it sets for a delicious contrast. Busy weeknights might call for a quicker cleanup, so lining the pan with parchment paper instead of aluminum foil can be a helpful hack for an even easier release.
