1/2 cup diced tomatoes
1/3 cup sliced green onions
1/4 cup pickled jalapeños (optional)
1 cup sour cream
1/2 cup salsa
Fresh cilantro for garnish (optional)
Directions
1. Preheat your oven to 425°F (218°C). Spread the frozen tater tots in a single layer on a large baking sheet and bake according to the package instructions until they’re crispy and golden brown.
2. While the tots are baking, cook the ground beef or turkey in a large skillet over medium-high heat until fully browned. Drain any excess fat and stir in the taco seasoning mix according to the package instructions.
3. Once the tater tots are cooked, remove them from the oven and reduce the oven temperature to 375°F (190°C). Transfer the tater tots to a large ovenproof dish or a cast iron skillet, spreading them out evenly.
4. Spoon the seasoned meat over the tater tots, then sprinkle the shredded cheddar and Monterey Jack cheeses on top. Add the black olives, diced tomatoes, green onions, and pickled jalapeños (if using) evenly over the top.
5. Return the dish to the oven and bake for about 10 minutes, or until the cheese is melted and bubbly.
6. Remove from the oven and let cool slightly. Top with dollops of sour cream, a drizzle of salsa, and a sprinkling of fresh cilantro if desired. Serve immediately.
Variations & Tips
For a vegetarian option, you can skip the meat and use a can of black beans drained and rinsed instead. If your family likes things spicier, try adding some chopped fresh jalapeños or a dash of hot sauce. For those with a milder taste, you can replace the pickled jalapeños with sweet bell peppers. You can also experiment with different cheeses or add a layer of nacho cheese sauce for an extra gooey treat.
