1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs, granulated sugar, and melted butter in a medium bowl. Press mixture into the bottom of a 9×13 inch baking dish. Bake for 8-10 minutes, until lightly browned. Let cool completely.
2. In a large bowl, beat cream cheese and powdered sugar until smooth.
3. In a separate bowl, whip heavy cream to stiff peaks. Fold in 3/4 cup whipped topping to lighten, into the cream cheese mixture. Spread evenly over cooled crust.
4. In another bowl, whisk together sweetened condensed milk, key lime juice, and key lime zest until well combined. Pour over the cream cheese layer and spread evenly.
5. In a large bowl, whisk together instant vanilla pudding mix and cold milk until thickened. Spread over the key lime layer.
6. Top with remaining whipped cream and garnish with additional lime zest. Chill for at least 2 hours before serving to allow flavors to meld.
