Ingredients

Makes about 12 parcels:

Puff pastry: 1 roll (rectangular or round)
Fresh spinach: 300g (or well-drained frozen spinach)
Ricotta: 150g
Grated Parmesan: 50g
Mozzarella: 100g, diced
Egg: 1, for brushing
Garlic: 1 clove (optional)
Extra virgin olive oil: 2 tablespoons
Salt and pepper: to taste
Sesame or poppy seeds: to taste, for
