### Instructions: How to Make Cheese Fries from Boiled Potatoes
#### Step 1: Boil the Potatoes
1. **Peel** (optional) and **cut** the potatoes into thick strips, about 1/4 to 1/2 inch wide. If you prefer, you can leave the skins on for extra texture and flavor.
2. **Boil** the potato strips in a large pot of salted water. Bring the water to a boil, then reduce the heat and let the potatoes cook for about **8-10 minutes**, or until they are just tender but not falling apart.
3. Once the potatoes are done, **drain** them well and let them cool slightly. This will help to reduce moisture, which is key to getting crispy fries.
#### Step 2: Crisp the Potatoes
1. **Heat olive oil** in a large frying pan over medium-high heat (or preheat your oven to 400°F (200°C) for baking).
2. Once the oil is hot, **carefully add the boiled potato strips** to the pan, being sure not to overcrowd them. #### Step 3: Add the Cheese and Melt
1. While the fries are still hot, **sprinkle the shredded cheddar cheese** (or cheese of your choice) over the fries. The heat from the fries will start to melt the cheese immediately.
