Preparation:
1. Wash the zucchini, then cut them into not too thin slices, leaving them attached at the top. Season with salt and pepper and let them rest for 15 to 20 minutes to release some moisture.
2. In a bowl, beat the eggs with a pinch of salt and a tablespoon of mayonnaise.
3. In another bowl, mix the breadcrumbs with the smoked paprika.
4. Lightly dry the zucchini with paper towels to remove excess moisture.
5. Dip each one first in the flour, then in the beaten egg and finally in the seasoned breadcrumbs.
6. Heat the oil in a frying pan and fry the zucchini until golden brown on both sides, about 5 to 7 minutes per side over medium-low heat.
7. Once golden brown, remove the zucchini from the pan and place them on paper towels.
8. In a small bowl, mix the finely chopped garlic with the dill and cold boiled water; use this mixture to season the zucchini before serving.
