– 2 pounds of potatoes, peeled and cubed
– 1/2 cup milk
– 1/4 cup unsalted butter
– 1 cup shredded cheddar cheese
– 1 packet of taco seasoning
– Salt and pepper to taste
– Optional toppings: diced tomatoes, sliced green onions, sour cream
Instructions:
1. Place the peeled and cubed potatoes in a large pot and cover them with water. Add a pinch of salt to the water.
2. Bring the pot of water to a boil and cook the potatoes until they are fork-tender, usually around 15-20 minutes.
3. Drain the cooked potatoes and return them to the pot.
4. Add the milk and butter to the pot with the potatoes and mash them together until smooth and creamy. You can use a potato masher or a hand mixer for this step.
5. Stir in the shredded cheddar cheese and taco seasoning. Mix well until the cheese is melted and incorporated.
6. Taste the mashed potatoes and season with salt and pepper to your liking. Adjust the taco seasoning if desired.
7. Transfer the cheesy taco mashed potatoes to a serving dish and garnish with diced tomatoes, sliced green onions, and sour cream if desired.
8. Serve hot and enjoy!
