Ingredients:
1 tablespoon Olive Oil
1 pound Ground Beef
1 medium Onion, chopped
2-3 Carrots, peeled and chopped
2-3 Potatoes (Yukon Gold or Russet), peeled and cubed
4 cups Beef Broth (or Vegetable Broth)
1 (14.5 oz) can Diced Tomatoes (undrained)
1 teaspoon Dried Thyme
1 teaspoon Dried Rosemary
1 Bay Leaf
Salt and Pepper to taste
Fresh Parsley, chopped (for garnish)
