Instructions

  1. Drop the ground beef into a large pot or Dutch oven over medium-high heat.
  2. Add the diced onions to the pot.
  3. Crumble the ground beef well as it cooks.
  4. Once the ground beef is fully cooked, drain the grease from the pot.
  5. Add the minced garlic to the pot, stir well and continue cooking for 1 minute.
  6. Add the chicken broth, Worcestershire sauce, salt, pepper and onion powder to the pot and stir well.
  7. Bring the liquid to a boil.
  8. As soon as the liquid is boiling add the instant mashed potatoes to the pot and stir well.
  9. Add the frozen mixed vegetables to the pot and stir well.
  10. Add the half and half and stir well.
  11. Bring the soup back to a boil.
  12. Once the soup is boiling, immediately reduce the heat to medium-low and leave the soup to simmer, stirring occasionally, for 15 minutes.
  13. After 15 minutes remove the soup from the heat and top with fresh chopped parsley if desired.
  14. Serve and enjoy!
