1 pound of jumbo shrimp, peeled and deveined.

1/2 cup of all-purpose flour.

1/2 teaspoon of salt and black pepper.

1 teaspoon of Cajun seasoning.

2 large eggs, at room temperature.

1 1/2 cups of panko bread crumbs.

1 cup of cooking oil.

Step 1

First, in a medium mixing bowl or shallow dish, whisk together the flour, salt, pepper, and Cajun seasoning. Alternatively, you can use Cajun seasoning alone for added flavor.

Step 2

Then in a separate bowl or plate, thoroughly whisk the eggs until well blended. In a third mixing bowl, spread a layer of panko bread crumbs across the bottom.

Step 3

To prepare the shrimp, coat both sides of each shrimp in the flour mixture, ensuring they are evenly coated, and then shake off any excess flour.

Step 4

Next, dip the coated shrimp into the egg mixture, making sure they are fully covered.

Step 5

To complete the coating process, take each shrimp and press the panko breadcrumbs onto both sides, ensuring an even and thorough coating.

Step 6

Turn the shrimp over and repeat the process, pressing the breadcrumbs firmly onto each side of the shrimp.

Step 7

Heat the cooking oil in a large saucepan over medium heat until it reaches a temperature of 350°F (175°C).

Step 8

Fry the shrimp in small batches for approximately 1 minute or until they are completely opaque, making sure not to stack the shrimp while frying.

Step 9

Using kitchen tongs, carefully remove each shrimp from the oil and place them one at a time on a cooling rack that is set over a plate lined with paper towels.

Step 10

Repeat this process with the remaining shrimp, following the same procedure.
